Meat is lamb leg. Didn't see them when raw but showed up after cooking. What could they be? Definitely not seasoning. I scraped them off. Weird taste. A bit hard.

    Stop cooking. I kid I kid. Fat or mustard seed very common in a lot of rubs and bbq. In all seriousness pay more attention to what you’re putting on your food then you’ll understand what is on your food. But that may be a hot take. I’ll wait for the downvotes
