Do you guys remember these things? I used to come home with 50 of these on friendships day. That 50 has shrunk down to three people. It happens with everyone in and all three of them have different personalities. But one thing that unites us that in studies we’re duffers and in must a plus. WhatsApp group when are we meeting until today my friends will say nihal you have never cooked for us which is a lie but they will never accept it. So today I am making pasta for my three friends. No, I’m not going to feed them. I’m going to show them through a video, through a real that this is how you make basil pesto pasta. I’m going to take a picture of this and put it on the WhatsApp group and then I will let the group explode with messages that I will be expecting. So tag your three friends in the comments and figure out which one will make the pasta. Happy Friendships Day and bye.

Ingredients
For the Basil Pesto:
• 1½ cups fresh basil leaves
• Iced water (for shocking)
• 60g Parmesan cheese
• ½ cup extra virgin olive oil
• 2–3 tbsp roasted pine nuts
• 2 tsp chopped garlic
• Salt to taste
• ½ tsp crushed black pepper
• Juice of ½ lemon
For the Pasta:
• Spaghetti (as needed)
• Reserved pasta water (¼–½ cup)
• 2–3 tbsp prepared basil pesto
• 1 small knob of butter
• 2–3 tbsp fresh cream
• Salt & crushed pepper to taste
• Parmesan (for garnish)
👩🏽🍳 Method
1. Make the Pesto:
Blanch basil leaves in hot water for 10 seconds, then shock them in ice water. Drain and blend with cheese, olive oil, pine nuts, garlic, salt, pepper, and lemon juice until smooth. Store in a clean jar in the fridge—it lasts 2–3 weeks easily.
2. Cook the Spaghetti:
Boil spaghetti in salted water till al dente. Reserve ½ cup of the pasta water before draining.
3. Bring it Together:
In a pan, add some of the reserved pasta water and 2–3 tbsp pesto. Stir in a knob of butter till melted. Toss in the pasta and mix well. Add fresh cream and cook on low for a minute until the sauce thickens and coats the pasta. Adjust seasoning.
4. Garnish & Serve:
Plate it up, top with Parmesan, a sprinkle of black pepper, and serve hot.
