Baked a sushi cake for my son’s 3rd birthday!

My son loves sushi and the sushi train – he asks to go every weekend! So I baked a sushi cake.

• Lemon cake
• Swiss meringue buttercream and lemon curd for ganache
• Swiss meringue buttercream for the outside
• Ready made fondant for the salmon, avocado, wasabi and ginger
• Mini marshmallows for the rice
