A delightful baked pasta dish that’s quick and easy to prepare! A recipe that will win over the whole family!

Lasagna sheets
800 g tomato (sauce/puree)
Mixed vegetables for soffritto (e.g., onion, carrot, celery)
100 g Parmesan cheese
150 g provola cheese
500 g spinach
500 g ricotta cheese
2 eggs
Salt
Pepper
Nutmeg
Extra virgin olive oil

Béchamel Sauce
1 l. milk
80 g flour
100 g butter
Salt
Pepper
Nutmeg

Good morning everyone, and welcome back to my kitchen. Today we’re making ricotta and spinach cannelloni with tomato sauce, béchamel, and ricotta. They’re truly amazing. One leads to another. Before we begin, I’d like to invite you to subscribe to my channel if you haven’t already, click the notification bell, and like this video. Let’s start with a nice sauté of onion, celery, and carrot, extra virgin olive oil, tomato puree, and salt to taste. Basil for flavor. Let it cook and in the meantime, prepare the béchamel. Melt the butter. Add the flour all at once and stir until you get the classic creamy sauce. Now, gradually incorporate the hot milk. I recommend using a whisk. This will make it much easier and quicker to dissolve any lumps. At this point, you can season with salt, nutmeg, and, if desired , a pinch of black pepper. I also prepared the spinach, boiled and well drained. Once they’re cool, we chop them with a knife. And if you like this video, please leave a like to support my channel. Thank you so much. We fold the spinach into the ricotta. Add the grated Parmesan, black peppercorns, and salt. At this point, I recommend tasting the salt to see if it’s okay; otherwise, you can add a little more. We also fold in two whole eggs. And finally, some grated provola or another type of melting, stringy cheese, whatever you like. In these cases, I don’t recommend mozzarella unless we let it drain for a couple of hours on a kitchen towel to remove all the excess water. Take a large baking dish and make a nice bed with our béchamel and a little tomato sauce. Blanch the fresh pasta for 2 minutes. These are lasagna sheets. They’ll make large cannelloni that are very easy and quick to fill. We let them drain on a clean cloth and then use a piping bag to make our process even quicker and more perfect. You can now also share on WhatsApp. Arrange the cannelloni in the baking dish. Cover with the remaining béchamel sauce and tomato sauce. And of course, a generous sprinkling of grated Parmesan cheese is a must, to create that inviting, delicious, and crunchy crust at the end of cooking. To prevent them from drying out, we can add a couple of ladles of cooking water. Do this along the edges. Bake in a preheated oven at 180°C (350°F) for 30 minutes. And voilà, our cannelloni are ready. Delicious fresh from the oven, but they’re also delicious cold, especially during this summer. A truly delicious, mouth-watering dish that can be prepared in no time, as you’ve seen, and requires just a few simple ingredients. I hope you enjoyed this video.
