For a while, the days were getting cool, and I could sleep with the windows open. I was getting to a soup mood. So for lunch I made a simple minestrone soup recipe for lunch. Some crusty bread to soak up the broth, takes me to heaven. Ice tea was a must too. So if you are looking for a fast soup look no farther. Just make it.

Saute 1/4 chopped onion, 1 sliced carrot and 1 celery rib diced in 2 teaspoons of olive oil. Once the onion starts to become transparent. Pour in 1 1/2 cups of chicken stock along with 1/2 teaspoon of oregano, 1/2 teaspoon thyme, 2 teaspoons of parsley, 1 bay leaf, 1 teaspoon of minced garlic, 1/2 teaspoon of salt and 1/4 teaspoon of pepper. After a quick stir, pour in 1 cup of diced canned tomatoes and 3/4 of white beans. Once it comes to a boil, add in 1/3 cup of macaroni and lower the heat to a simmer. Once the macaroni is cooked, the soup is done. Serve with crusty bread.
