Made these grilled short ribs inspired by the movie Midsommar as part of this whole horror/food thing I'm doing. Idea was to play w/traditional Swedish flavors. Boned out a plate of short ribs and cut it into steaks, seasoned w/an allspice-based rub, glazed w/infused honey/vinegar while grilling, cooked to internal temp of about 135-140. Rolled in a board sauce and topped w/grated fresh horseradish.

I’ve only cooked short ribs to 200+. What’s the texture like when they’re cooked to these temps? Are they tender?
