Plan is around three hour on the grill then wrap for another three.

Only a small bit of meat so planning 6/7 hours.

    What’s your temp going to be?

    Be prepared for the stall that will happen between 60-80c as it can take quite a few hours to reach final temp. I normally transfer to a foil tin around the 4hour mark to avoid drying out too much and you can spritz with some ACV and Water also to keep a nice bark and moisture level.

    Can’t lie, it can take 8-9 hours to get to 200 temp. 6 hours would be done, but not shreddable unless I guess you’re cooking high.

    The rest is also important. Buy an igloo or something and wrap it in a washable towel
