You only need a few ingredients.

Ingredients:

– One Eggplant.
– Tomato pulp or tomato puree: 400 g / 14 oz.
– Mozzarella cheese: 100 g / 3.5 oz.
– Taggiasca olives.
– One clove of garlic.
– Fresh basil leaves.
– Oregano.
– Olive oil.
– Salt.

Cook in the Air Fryer at 180 °C / 356 °F for 25 minutes.

Cook in the Air Fryer at 180 °C / 356 °F for 7 minutes.

  1. 🛑We do not recommend this recipe!! We followed the cooking instructions, temperature and time and the eggplant was not cooked, we had to cook it for another 15 minutes and even that it wasn’t as soft as the video shows. The only thing that saved the dish is that we didn’t make the sauce that was suggested, we made a wonderful and flavorful tomato and meat sauce an put lots of oregano and basil with the cheese before going into the Air Fryer for the second time. So this is our goodbye to this site. Good luck with your videos but make them more honest.

  3. Non ho in casa la conserva di pomodoro e sto facendo la melanzana in modo leggermente diverso, cioe' aggiungendo pomodori tagliati a fette, origano e scamorza delicata (la ricetta in cui la usavi con la melanzana era una bomba!!). Grazie, Rosario!

  5. This looks like a great idea. I would think that adding a bit of cooked ground beef to the sauce would up the protein to make it a whole meal.

  8. I would ditch the tomato sauce, add red onion, roasted red pepper’s, pecorino Romano, and fresh mozzarella. And top it off with fresh basil and balsamic vinegar

  10. You have to try the Greek dish papoutsakia! It's eggplant cut in half (like the way you make it), filled with ground beef in tomato sauce, topped with béchamel and cheese. Really delicious!

  11. J'ajoute une cuillère à café rase de tapenade à la préparation de tomates pour donner un bon goût d'olive. Et je n'étais pas satisfait avec la mozzarella, j'ai fait plusieurs essais, avec du camembert c'est excellent !

  13. Eggplant needs to be soaked in water before cooking in order to lose its sourness and become more sweet.I normaly soak the eggplant for as many hours as I can.
