    Used Jealous Devil lump for the sear — forgot just how hot this stuff runs. Left them skin-side down too long while chatting, and the sugars in the rub + sauce went nuclear. Some burnt beyond saving, others still had good bite. Lesson learned: high heat + sugar = move fast or pay the price.

    Still smelled amazing though.

    Have a blessed night bro. Little dark but I like my wings well done, I go way high with final temps on wings. Those sugar sauces will get ya.

    My favorite posts are ones where shit went tits up. It can’t always be a 72oz Tomahawk reverse seared, smoked with unicorn wood and finished in Himalayan dragon butter. Everyone’s been there and I always say: “.. you still ate it though, right?!”
