today I’m going to show you my favorite way to make [Music] zucchini my name is Carrie with eating on a dime.com we’re on a mission to help families eat well on a budget and I wanted to talk about zucchini today because here in Oklahoma and I’m sure a lot of people it’s probably the most grown vegetable that people grow at home you know like if you’re going to start a home garden you’re probably going to start with zucchini and so come in the middle of the summer you’re going to have a lot of this roasted zucchini is my all-time favorite way to make zucchini um because oftent times zucchini goes from really tasty to really mushy if it’s not cooked correctly and so today we’re going to show you how to roast it so it tastes amazing every single time and if you’re wanting to try this recipe in the summer don’t worry because you could do the exact same recipe in the air fryer now you can find today’s recipe linked in the description below and um before we get started I really want you to comment below if you’ve ever grown zucchini or how is your favorite way to eat zucchini first we are going to preheat the oven to 425° okay so we are redo we are going to need about 1 and 12 lbs of zucchini which usually equates to about three but if you want to be really fancy you can get a food scale i will link this for you as my favorite one you can tell because it’s really dirty uh but we use it all the time like just for macros and counting calories and stuff like that but it’s great for measuring your zucchini but again this recipe is foolproof so just grab some zucchinis you’re good to go the first thing we’re going to do is we are going to cut off the ends of the zucchini after you cut the ends off you’re going to then quarter them lengthwise so we’re just going to cut them in half the long ways roll it over and then cut it in half again so you have spears just like so then once you have them in the spears form you’re going to cut them in like 2 in pieces so about this i’m going to go ahead and do that one again so we’re going to do this for every single zucchini cut the ends off then you’re going to take your knife and run it lengthwise once just like that roll it over hold it together and cut it lengthwise again then you just cut them into their 2-in pieces see how I’m holding them together and then you have these beautiful pieces just like that now make sure you do have a really good knife if you’ve been following me for a while you know this is the knife you need it’s super great it is the J A Henles and I know that I’ve had this knife oh my goodness for over a decade and so over 10 years so don’t waste your money buying like the box sets of knives just get yourself one good knife and you sharpen it and it it’s it’s golden i’ve even cheated and thrown it in the dishwasher don’t tell anybody um then we’re just going to toss this into a bowl this is the really the most important step because old Carrie used to just throw this on a baking pan drizzle it with some oil sprinkle some seasonings on top but if you throw it in a bowl with the oil and the seasonings and toss it all together it gets evenly coated and it makes your zucchini so much better i wanted to make sure and give you one more tip use a large bowl so I have done this where I’ve used a smaller bowl and it’s hard to toss the veggies in there and then all of a sudden you have one zucchini that is loaded with seasoning and one zucchini that has nothing so just make sure you have a widemouth bowl we’re going to do two teaspoons of olive oil or like avocado oil will work just drizzle it on top then we’re going to add our basic seasonings this basic seasoning actually tastes delicious on any vegetable so just FYI if you’re roasting them we’re going to start off with a half a teaspoon of Italian seasoning half a teaspoon of salt the great thing is is you probably already have all these seasonings at home some garlic powder you could do minced garlic if you wanted to i do like garlic powder because it can evenly distribute over the uh veggies and then 1/4 teaspoon of black pepper then we’re just going to take a spoon or you can use your hand and just mix it around so we can get that Oops one fell out get all that seasoning mixed around on the veggies and get that oil distributed now it’s going to feel like you’re not doing anything you know when you’re doing this but every time you toss them you’re just spreading out that seasoning so you don’t have one that has the clump then we’re just going to have a baking sheet and parchment paper i am obsessed with this parchment paper it has been a game changer for me so I’ve included a link for that too it’s unbleached which I didn’t realize for the longest time that parchment paper is bleached who wants bleach on their food but I love that they’re already pre-cut they’re super cheap and it just lays there then we’re going to just lay our zucchini right on top and we’re going to spread it out into a thin layer so what I mean is you just like how it’s clumped up here you don’t want that you want them spread out so they can get roasted one thing that I’ve learned and sometimes I like to flip them over but you don’t have to is that zoo because you’re going to like toss them around is that when you’re roasting vegetables if you have them too close you end up steaming them but if you have them spread out then it ends up roasting them so not that there’s anything wrong with steaming them it’s just a completely different flavor and I like the roasted flavor better okay and now off to the oven they go the little tip I like to do is let’s say you’re grilling or doing a crock-ot recipe i like to get this started and I just let it sit on this on the baking sheet and then I wait and throw them in the oven when everything’s about to be done cooking and the reason is that cold cooked zucchini is gross i don’t like it um so you want them fresh out of the oven when it’s time to eat so make sure you plan accordingly we’re going to place this in the oven for about 15 to 20 minutes keeping an eye on them wanted to show you what they look like fresh out of the oven they don’t have to be like super brown but you can tell when they’re done like if you can poke a fingernail in there or like you could use your fork yum now here’s the trick you want to take them out of the oven before they’re done so if you like yours a little crunchier remove it just a few minutes because they continue cooking as they sit here and now we are going to do uh my favorite part and what we we tried this recipe multiple ways to come up with what we loved the best um but adding lemon juice on top at the end it’s so good so you can leave it out but it’s very good leave out but it’s amazing if you just add a fresh squeeze lemon right on top now if you don’t have our lemon juicer highly recommend it this just makes life so much easier and it’s very inexpensive and now it’s time to serve now if I was just serving this for my family or a crowd honestly I’d probably just leave it on the um cookie sheet baking sheet but you can also just place it on a serving dish or a plate but in my family we’re busy and I’m lazy so we like to just serve it right off the pan and I love how simple this is because of the cleanup is virtually nothing because of that parchment paper and all we have to do is I keep one of my larger glass or ss bowls in the fridge in a plastic bag (for couple of days maybe) for tossing in olive oil and seasonings and veggies do jor…. Just sayin', saves oil, costly seasonings, time and money. Wash every 3 or 4 days whether it needs it or not, lol ❤
