Did you know that August was one of the best times of the year to enjoy fresh produce? This is prime salad season. You know why, right? Most farms and gardens are bursting at the seams with fresh veggies right now. It’s harvest time, baby. One of my favorite things to do during salad season on the weekend is make a giant veggie full salad. And this veganized nissa salad has everything. It’s chalk full of garden veggies and it has a wicked good roasted garlic, dijon, and basil vinegrett that’s drinkably delicious. This salad has all the colors of the rainbow and it’s perfect for a summer lunch or dinner on the deck. It’s a celebratory salad, showcasing the bounty of August’s harvest. There’s only a few weeks of summer left. How will you make the most of it?
