We are going to use tuna, diced onions, cucumbers, tomatoes, calamato olives, little capers for extra oomph, and pasta. If you don’t like any of these ingredients, swap them. Use something that you like or is fresh in your market this time of the year. Pour the pasta in and give it a stir. Don’t forget to salt the water. How much salt? Quite a bit. Okay, so we are going to make the vinegrett. We need about I don’t know how much? Somebody tell me. Plain Greek yogurt. And we need about 2 tablespoons. We need a little bit of mustard, a little bit of garlic powder, lemon juice, my best friend, salt, freshly ground black pepper, 1/4 cup of olive oil, and let’s try it. M, it’s perfect. But I’m missing the parsley. Let’s cut some parsley. Rough chop is fine. Voila. Okay, it’s time to assemble the salad. We have the pasta cooked. We’re going to add the tuna, onions go in, cucumbers, and next are the tomatoes, olives, last but not least, capers. Mix it gently so you don’t smush everything together. And then we are going to add the vinegrett. Let’s taste it. Life is way too short for boring and tastes like salads. This one’s special and you should make it.
