I used vegetable oil to cook them and found that for the smaller ones a slightly higher temp of around 378-380f gave a really nice crisp exterior while preserving the fluffy interior.

    In NOLA they try to make the powdered sugar into a pyramid, they go even heavier on it if you can believe that.
