That looks like some good smoked salsa, now I just need some corn tortilla chips and it’s on plus I would put a spritz of lime gives it a little Tang

We’ve roasted about 100lbs so far. Our local Frys/Kroger has them for $1.50 a lb and since they’re only once a year, we’re going wild. We roast them and freeze them.

12 tomatillos* 6 hatch chilies * Garlic* 1 whole white onion* Palm full of salt 1/8 cup lime juice (fresh squeezed) 1/4 palm of Cumin
* smoked
Hatch chilies skinned
Blended to desired consistency
