I learned how to make ficasha from an Italian baker. But if the recipe is too [ __ ] difficult, I can’t help but think, I’m not [ __ ] making this at home. There’s got to be a better way. But when you understand the science of bread making, there are shortcuts or easier ways to do things. So, I bring to you a ficasha recipe that does not require the knowledge of Pythagoras theorem and the [ __ ] square root of pies [ __ ] This is a simple recipe and just as good. Flour, salt, and yeast mixed together. Tempered water. The good news is there’s no [ __ ] kneading. But don’t think we’re not going to touch the dough. We’re going to touch this dough in ways that you wouldn’t imagine. It’s covered. We let it rest for 30 minutes. 30 minutes later, wet hand. Pick it up. Fold it over. Pick it up. Fold it over. Pick it up. Fold it over. Pick it up. Fold it over. Get olive oil. Purely just golden shower it. Continue the golden shower. Olive oil your hand as well. Tip the dough out. Little more olive oil. I’m just going to cover it with another tray. Place it in the fridge overnight. It’s fallen into the shape that we’re after. Now, we’re going to let this cut proof at room temperature. It’s been 90 minutes. Now, we’re going to finger it. Oil on your fingers. And we’re going to do it fast. You don’t want to just leave your fingers in there. The really, really big bubbles, I pop them. You don’t have to, but personally, I don’t want to have to bite through a testicle to get to my deli meat. I’m going to add some grated parmesan, rosemary, flaky salt, or rock salt. Now, we bake the [ __ ] up. This was in there for 30 minutes. If you like your bread more Caucasian, leave it in there for 25. Look at that. Crispy on the outside, hydrated on the inside.
