Minestrone
* 1 onion (diced)
* 2 carrots chopped
* 1/4 Celeriac (diced) OR 2 celery ribs (chopped)
* 3 garlic cloves, grated
* 1 tin Chopped Tomatoes
* Handfull Long Green Beans ( Chopped)
* 1 Tin White Kidney beans – washed
* 900ml Veg Stock – I use @knorruki
* 2 Bayleaves
* 1 tsp Dried Oregano
* 1 tsp Dried Thyme
* 90g Small Pasta ( Shells, Macaroni etc)

Welcome to day 25 of me day where I attempt to upload a new recipe every day for a year. And I have some recycling to do. So I want to see how much of the dish I can pay for with the money I get back from the recycle thing. And so my journey began. Look, I know I’m not going to be able to get much with seven quid, but with the addition of my pantry and my dry goods, I should be flying. And I even managed to get a free coffee. Completely forgot that I had a lot of free coffees on my ranking honest cart thing. So with just over about €7, I was able to get the base for a number of dishes. But I have decided to settle on minisrroni. Minoneroni has to be one of the most famous Italian dishes out there. Also incredibly old. It dates back to ancient Rome and was a muchbeloved poverty dish. That being said, I’m going to get home. We’re going to get straight into making this. Start by doing a rough chop on an onion, two carrots, and I am choosing to use celery because my wife hates celery and she can taste it away, but you can use celery. Grate three cloves of garlic and chop up some green beans. Now the prep is out of the way, let’s get cooking. Get some oil heating in a pan. Add your celery or your celery, your onions, your carrots. Fry off for a few minutes. Add a tin of chopped tomatoes, your garlic, and your vegetable stock. Then go in with dried thyme, oregano, two bay leaves. Give that a mix and let simmer. Covered for about 20 minutes. Remove. Add your pasta and green beans. Give that a mix. Let the pasta cook out. This should take about 10 minutes. Serve in a bowl with some grated parmesan, some torn parsley, and some crusty bread. Sorry for the noises. It’s like the food equivalent of your mom giving you a hug and telling you everything is going to be okay. And yes, Len, your brothers are in fact dicks. Love you guys. Seriously though, give this one a go. Minestroni is good most of the time. Homemade minestroni, however, is on another level. I've never cared for the idea of minestrone, but this recipe is so simple and looks delightful…so I need to do a shop and make it!❤
