Full written Recipe – Mushroom Pepper Fry
Prep time: 10-15 minutes
Cooking time: 20-25 minutes
Serves: 3-4 people

Ingredients:
Pepper Fry Masala
BLACK PEPPERCORNS | साबुत काली मिर्च 2 TBSP
CUMIN SEEDS | जीरा 1 TSP
FENNEL SEEDS | सौंफ 1 TSP
Mushroom Pepper Fry
OIL | तेल 2 TBSP
CUMIN SEEDS | जीरा A PINCH
FENNEL SEEDS | मेथी के बीज A PINCH
CURRY LEAVES | कड़ी पत्ता 15-20 NOS.
GARLIC | लहसुन 1 TBSP (CHOPPED)
GARLIC | लहसुन 15 CLOVES
ONION | प्याज़ 3 MEDIUM SIZED. (CHOPPED)
GINGER GARLIC GEEEN CHILLI PASTE | अदरक लहसुन मिर्च की पेस्ट 2 TBSP
TURMERIC POWDER | हल्दी पाउडर 1/2 TSP
GARAM MASALA | गरम मसाला 1/2 TSP
PEPPER SPICE MIX | काली मिर्च वाला मसाला HALF QUANTITY
HOT WATER | गरम पानी A SPLASH
SALT | नमक TO TASTE
MUSHROOM | मशरूम 500 GRAMS (DICED)
PEPPER SPICE MIX | काली मिर्च वाला मसाला REMAINING QUANTITY
GREEN CHILLI | हरी मिर्च 4-5 NOS. (SLIT)
CURRY LEAVES | कड़ी पत्ता 15-20 NOS.
LEMON JUICE | नींबू का रस OF 1/2 A LEMON
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
Method:
Set a small pan over high heat & once it gets hot, lower the flame & add fennel seeds, cumin seeds & black peppercorns, keep stirring & dry roast them over low flame until the cumin seeds turn light brown, then transfer them into a bowl, cool them down completely & grind into a fine powder.
Set a fry pan over high heat, add oil & let it get hot.
Add cumin & fennel seeds, garlic & curry leaves, stir well & cook briefly.
Then add the onions, stir & cook over high heat until the onions turn light golden brown, then add the ginger garlic & green chilli paste, stir & cook for 1-2 minutes, allow the onions to brown further.
Then lower the flame, add turmeric powder, garam masala, pepper fry masala & splash of hot water stir & cook the spices over high flame for 1-2 minutes, then add salt.
Once the masala is cooked, add the cut mushrooms, stir well & cook over high flame for 4-5 minutes, then cover & cook over low flame for 2 minutes, the mushrooms will release all their moisture.
Open the lid & cook over high flame until the water gets evaporated, then add the remaining pepper fry masala, green chilli, curry leaves, lemon juice & fresh coriander, stir well.
Taste & adjust salt if required & your delicious mushroom pepper fry is ready, serve hot with some parotta, appam or neer dosa. You can also have this dish as a starter.

Welcome to YFL. Today, we’re making a mushroom starter. And among the mushroom starters,
I have some personal favorites. Like the Indo-Chinese Mushroom Chilli, or the Mushroom Ghee Roast, or the Stuffed Mushroom Tikka. And just like that, we have a
South Indian preparation, Pepper Fry. In that preparation, if you want to make a vegetarian recipe, the best way to make it with
mushrooms is Mushroom Pepper Fry. And this recipe, you can have it as a starter, or you can have it with neer dosa,
appam, or parotta as a main course. Or if you feel like making it as a snack, this is that recipe. You’ll enjoy eating it, it looks so delicious. The best thing is, it’s a simple and quick recipe. There’s no deep frying or anything. In just one pan, you can make it quickly. It’s a fast, quick recipe. It’s fun to make, and fun to eat. And for this recipe, you can make
a simple pepper fry masala at home. Let’s see how to make that, and then after using that we will see how to make
mind-blowing mushroom pepper fry. Heat a pan well, and then lower the flame. Then add 2 tablespoon whole black pepper, 1 teaspoon cumin seeds, and 1 teaspoon fennel seeds. You have to add a combination of these 3 spices. And you have to roast them well on a low flame, so that the spices start to release their aroma. And you have to roast these spices well. You have to take more black pepper, because it’s a pepper fry, So use more black pepper. And the cumin and fennel seeds, which complement the black pepper, and give it a freshness, it’s a beautiful combination. You have to eat it if you haven’t eaten it before, and if you’ve eaten the pepper fry recipe before, then you know what I’m talking about. Once the spices are roasted well, you have to remove them to the side, and let them cool down before grinding. Once they cool down, add them to the mixer grinding jar, grind them in a fine powder, and our pepper fry masala is ready. Our pepper fry masala is ready. Only 3 spices are used. It’s a very simple preparation. The rest of the recipe is beautiful and simple. And usually, when a recipe is made in South India, it’s traditionally a non-vegetarian recipe. And I know that you all are asking me in the comments, what else can we use instead of mushrooms. You can make it with paneer, or you can make it with baby corn and broccoli. You can make different things like that. But the result you get from mushrooms, you won’t get from anything else. This is my personal preference and recommendation. So if you like mushrooms, if you’re making a vegetarian version, make it with mushrooms only. You’ll have double the fun. Okay. So this was the masala recipe. The rest of the process is very simple. You’ll make a masala, add the mushrooms directly to it, add the pepper fry masala, and everything is ready in the same pan. No deep frying, no shallow frying. It’s a simple process. Let’s see what the process is. Heat the pan on a high flame. Then add 2 tablespoons of oil. Once the oil is hot, add a pinch of cumin seeds, a pinch of fennel seeds, add 15-20 curry leaves, 1 tablespoon of chopped garlic, and 15 whole garlic cloves. Add the whole garlic. When the garlic is cooked with the pepper fry masala, you’ll enjoy eating the garlic at the end. Roast everything lightly. Then add 3 medium sized chopped onions. After adding the onions, stir the onions as well. Cook on a high flame. This recipe is cooked on a high flame. Cook it on a high flame. The result will be much better. Cook the onions until they turn light golden brown. You can see that I have cooked
the onions on a high flame. It has started to change color. At this stage, add 2 tablespoons of ginger-garlic-green chilli paste. Add it in a good quantity. It gives a good flavor. Stir it well and cook it. Once you have cooked the ginger-garlic-chilli paste, you can see how the masala is looking with the onions. Lower the flame and add some spices. Add 1/2 teaspoon of turmeric powder, 1/2 teaspoon of garam masala, add half the quantity of pepper fry masala, and add some hot water. so that the spices don’t get burnt and we get a chance to cook it. Stir and cook the spices a little. Once the masala is cooked, add some salt to taste. Stir and cook it a little. Once the masala is cooked well, you can see how the masala is cooked. At this stage, I have washed, dried and cut 500 grams of mushrooms. Add the mushrooms. Cook it on a high flame for 4-5 minutes. At this stage, the masala should coat the mushrooms well and then we will cover it and cook it. If the size of the mushroom is very big, then cut it into 4 pieces. If it is small, then cut it into 2 pieces. Don’t cut it into very small pieces. because mushrooms shrink. If you cut it into very small pieces, then it will become a mushroom burji. Once you have cooked the mushrooms for 4-5 minutes, cover it and cook it for 2-3 minutes. What will happen is, the masala has salt and the mushroom has a lot of water, so the water from the mushroom will come out and the water will leave the mushroom. After 2-3 times, when you open the lid, you can see how the mushrooms have released the water. At this stage, the flame will be on high again and you just have to dry the water. If you want to keep the masala a little sticky, then you can keep a little masala. If you want to dry it, then you can dry the masala completely on high flame. You can see how I have cooked it. I like this consistency. At this stage, add the remaining pepper fry masala. 4-5 slit green chillies, 15-20 curry leaves, half a lemon juice, and fresh chopped coriander. After adding all these things, you can see what our pepper fry mushroom looks like. This preparation looks so beautiful. At this stage, you have to taste it. If salt is required, then you can add and stir. And you can see that our Mushroom Pepper Fry is ready. Let’s plate it, YFL style. 🎶Music🎶. What a beautiful recipe this is! And it is so simple to make. You just have to roast the masala, grind it, and everything is done in one pan. And it is such a beautiful and simple recipe. But the flavours are so robust. The pepper fry, the pepper, and the punch of fennel and cumin seeds, it is so delicious. And along with it, a lot of curry leaves, and the fresh green chillies which are added at the end, along with lemon. It’s a beautiful combination. Try this recipe once.
