
This recipe has been my absolute meal prep MVP lately as i make it on Sundays and I’m set for days no midweek cooking worries no scrambling for something healthy and no boring dry chicken breasts in sight lol. the ingredients are simple and easy to find, also the high protein/volume combo keeps me full without piling on calories, the bone broth gives it a great amino acid source that’s super satisfying, and somehow the flavor actually gets better as it sits. It freezes and reheats perfectly so I can stash portions away for later and always have a healthy meal ready to go.
Season some chicken with salt & pepper, then sear them over medium high heat
Remove them, then add a bunch of carrots, celery and yellow onion and saute for 5-6 mins
Add minced garlic, cook for 1 minute
Add a bunch of chicken bone broth, add the chicken back in and simmer on low until the chicken shreds easily
At the end, taste for salt and add in a bunch of fresh dill
I used rice pasta as the noodles

Honestly I love soup but as someone who needs to gain weight I rly agree with you that it’s such a good weight loss tool. All that liquid fills you up!!
You could probably use protein pasta, too, to add even more protein. The taste would be a little different, but I’ve gotten used to it.

This looks delicious, awesome way to have something ready to unfreeze and enjoy! How much bone broth and chicken are you using? I think the protein count may be too high given a cup of bone broth it about 10g’s of protein and chicken is about 40g’s per cup. Maybe the pot is bigger than I think, though.
I think you’re miscounting your protein. That’s insanely high.
I have been eating this all time time since I’m trying a paleo diet. I do mine in the pressure cooker with a whole chicken and it gets tender with just 20 minutes high pressure cooking time! I have also been roasting the carrots and whatever veggies on the side because I don’t like how they get so soft after soaking in the soup for days. I add them to my bowl when I reheat.
So exhausting with protein this and hack that. And this miscalculated protein is ridiculous. 600 grams of chicken is not 600 grams of protein. It is A protein, but not macros-wise.
You would need about 3-4 whole chickens for 600g protein.
unless you added 3kg of chicken that is not 600g of protein

I have some bone broth I need to use. I was reading recently about doing chicken soup for breakfast as a good high protein meal! Chicken is always a classic.
I add butter beans and/or cannelli beans for extra protein, maybe throw in a handful of kale – you got a stew going, baby!
