I cheated and used boxed cornbread, realized I didn’t have milk so i used slightly watered down greek yogurt. The bottom got a little brown but it’s still pretty good.

  9. I made something almost identical to this a few months ago and really loved the flavor! But mine did not slice as nicely as yours did, I’ll have to try again! I always add a tablespoon or two of coarse corn meal for more texture, inspired by the Costco corn muffins.
