Disclaimer: to the grilled cheese constables by definition this isn’t a grilled cheese as it has more than cheese in the filling. I’m still calling it a grilled cheese though 🙂‍↕️

Wagyu Philly cheese steak grilled cheese with caramelised Koji onions, Yuzu Wasabi Garlic Mayo and Vermont Cheddar. Grilled in Wagyu Tallow

Inspired by favorite sandwich of all time the Philly cheesesteak, I got some Wagyu ribeye Shabu Shabu at a discounted price from my local Japanese supermarket so thought to make this.

I prefer my onions caramelised; added Shio Koji to give them an extra umph on umami.

Made a Yuzu Wasabi Garlic Mayo. You can eye ball it. My tip is for the wasabi make sure you buy the Japanese wasabi paste read ingredients behind it should contain real wasabi and not mustard nor horseradish like most western brands.

My Philly cheesesteak filling as the wagyu shabu shabu is delicate and cooks quick I premade the onions added it to the pan with the thin cuts(shabu shabu) with abit of Wagyu tallow bit of salt n pepper plus Vermont cheddar.

For the crisp crunchy exterior, spread mayonnaise on the outsides of the bread slices(side that will face down on pan). Slow and steady is the best way to to toast without burning and uniformly.

I added more Vermont cheddar when assembling the sandwich before grilled. You can never get enough cheese 🧀
