Let’s make a proteinpacked chickpea cucumber salad tossed on a dreamy creamy green goddess dressing. It’s actually quite a simple salad and we start with the cucumbers. You need quite a few since it’s a cucumber salad. And then we’re going to follow with some red onion. We move on to the dressing and it’s a green goddess dressing. It’s sort of like my variation. And what it has is a bunch of herbs including chives, terrigon, uh you can add parsley, coriander, whatever you’ve got on hand. Some garlic, light mayo, and light yogurt. uh pepper, salt, and if you like a little bit of sweetness, you can add some honey. Uh whiz it through until it’s lovely and smooth. Give it a taste. It’s so delicious. And the final step is add those chickpeas and cucumbers and onion to a big bowl. Toss it through with that green goddess dressing. It’s fresh, it’s crunchy, and it’s packed with protein. What else could you ask for?
