Salad spring mix with bellpeppers, red onion tomatoes plus pan roasted corn/almonds and oven baked potatoes. I add feta or halloumi in the morning before heading out to work. I just bring the entire salad dressing with me hehe

Would be awesome if other veggie lovers out there share their meal prepping ideas? I usually eat protein dense breakfast to get me through the day. Have my little snack around 11pm and eat my salad around 2pm. Leave work by 4pm. Feels like a small feat but pretty proud of myself 🤣
