These Lamb Koftas might be the perfect weeknight meal
They only take a few minutes to prep and cook in no time at all! If that’s not an excuse to fire up the BBQ, I don’t know what is
– Preheat your BBQ to 200c
– Add 1 cup Greek yoghurt, 1 grated garlic clove & 1tbsp dried dill to a bowl & mix well
– To another bowl add your lamb mince (I used about 750g) & a generous amount of Kofta rub. Mix until combined
I, roll into a sausage and skewer. I soaked my skewers in water for an hour before cooking to ensure they don’t catch fire
– Grill directly, turning often until they hit 74c internal
– build your flatbread with the lamb, yoghurt and a mix of tomatoes, onion & cucumber
