A friend of mine just got back from a vacation in Maine and brought me back a bunch of mackerel that he caught. As an unabashed lover of small, oily, fish, I jumped at the opportunity. I kept things simple, just some salt, garlic, olive oil, and red wine vinegar, kind of like a half-assed escabeche, and a few chunks of oak. I smoked it around 300° F or so until the meat was flaky, and then moved it over the coals briefly to crisp up the skin. Had it for dinner with a gigantes bean salad, and will probably eat the rest on a bagel with cream cheese.

Mainer here and I also love mackerel. Most people here view it as bait for larger fish, or the flavor is too strong for them. These look perfect!

We went out to nags head for a wedding a few years back and went fishing and mailed some Spanish mackerel, I was just gonna give it to one of the locals around the pier but we ended up getting it processed and grilling it later that night. Ended up being one of the best meals of the entire trip.

Reminds me of my granny in Ireland being handed a bag of them by my grandad after an evening fishing, and her then cooking them up. Fantastic times

Those look good. I’ve only done salmon from the smoker which is brisket tier in my opinion.
