And they came out great. Room for improvement but overall really good.

I used SPG as a rub. Took about 8 hours at 250 degrees. 2 hour rest. Added wagyu beef tallow at wrap.

What I could do better.

I over seasoned, salt was too strong. Less salt next time.

I went to the beach and didn’t make it home on time to wrap when I wanted. The ribs were at 187 degrees when I got home. I have a neater thermometer but we were having a good time at the beach and didn’t want to leave early. I had the tallow in the smoker during the entire smoke. I was planning to pull tallow and let cool for about 30 minutes and then rub on ribs but as I mentioned, beach was fun. Cooked for about an hour wrapped with tallow before I pulled at 203 degrees. 2 hour rest.

Ribs came out tender and juicy but I think I can do better next time. A little salty but nonetheless really tasty.

The ribs were not technically Dino ribs, they were uncut short ribs. My butcher said they don’t sell the prime rib “dino” bones.

    I highly recommend beef back ribs. They are my favourite thing to smoke. They cook much faster than short ribs so be careful.
