Inspired by Hutchins BBQ. Jalapeños stuffed with cream cheese, pepper jack, and pulled pork (had some leftover, otherwise would have done brisket). Wrapped in bacon and dusted with rub. Then I smoked em for 3 hours at 225 and glazed with bbq sauce at the very end.

Ngl I thought those were rats.
Have yet to make them myself. By the end the of cook, do the jalapeños have a bit of a crunch to them still or are they soft?
I’m going to have to try those. I made what I termed Tucson Twinkies a couple weeks ago

3 hours at 225 seems really long . Were they over cooked?
