I made the ball salsa. Here is the recipe. Question below.
Tomatoes (about 5 lb or 15 medium)
6 green onions, chopped
2 jalapeno peppers, diced
4 cloves garlic, minced
1/2 cup white vinegar (5% acidity)
2 Tbsp bottled lime juice
4 drops hot pepper sauce
2 Tbsp minced cilantro
2 tsp salt
But, I omitted the cilantro, and used fresh lime juice instead of bottled. This is my first time canning anything other than freezer jams. Is it ruined? I didnt realize bottled lime juice had a specific ph. Ugh

I mean you can put it in the fridge but yeah you needed to use the bottled.

Ball stirred up some controversy in 2016 when it listed fresh lime juice in some of its salsa recipes. Healthy Canning provides an extensive analysis here. op unless it specifies you could use fresh, you must use bottled for safety
