Ingredients:
Spinach (fresh)
Water (for blanching)
Yogurt (plain, unflavored)
Nurpur Cream (Dairy Cream)
Nurpur Mozzarella Cheese (shredded)
Salt
Red Chilli Flakes
Black Pepper Powder
Nachos (tortilla chips)
Cucumber (for serving)
Method:
Prepare Spinach: Take a generous bunch of fresh spinach (estimated at about 200-300g). Wash thoroughly. Chop the spinach coarsely.
Blanch Spinach: In a pot, bring about 2-3 cups of water to a boil. Add the chopped spinach to the boiling water. Cover and blanch for 2-3 minutes, or until wilted and vibrant green.
Drain and Cool Spinach: Immediately drain the blanched spinach. Squeeze out as much excess water as possible. Allow the spinach to cool slightly.
Combine Dip Ingredients: In a mixing bowl, add the cooled, drained spinach. Spoon in approximately 1/2 cup of yogurt. Pour in about 1/4 to 1/2 cup of Nurpur Cream from the 200ml pack. Add roughly 1/2 to 3/4 cup of shredded Nurpur Mozzarella Cheese. Season with 1/2 teaspoon of salt (or to taste), 1/2 teaspoon of red chilli flakes (or to taste), and 1/4 teaspoon of black pepper powder (or to taste).
Mix the Dip: Stir all the ingredients vigorously until they are well combined and form a smooth, creamy dip. The video shows additional yogurt being added around 0:33-0:34, so you might add another 1/4 cup of yogurt if you prefer a looser consistency. Continue mixing until everything is fully incorporated.
Serve: Transfer the creamy spinach dip to a serving bowl or glass. Garnish with a sprinkle of red chilli flakes. Arrange nachos (tortilla chips) around the dip. Serve alongside fresh cucumber sticks for dipping.
