The plan was to make hot sauce and a few jars of pickled jalapeños, but I ordered 4 airlocks and I had a handful of mason jars on hand (a couple were half gallon at least). I started processing the peppers and quickly realized I had nowhere near enough jars to brine ferment these. Luckily I have a vacuum sealer so I was able to do mash ferment instead. Anyhow, I ended up with 9lbs of jalapeños, 5.5lbs of habaneros and about 2.5lbs of everything else. Pretty content with this harvest considering this is my first year trying to ACTUALLY garden and not just neglect my plants and watch them die 😂 and I’m dealing with disease, pests and now deer think my garden is a buffet. Thanks for letting me share my happy moment with you all.

Wash and freeze and you will have plenty for a long time. I see you have a vacuum sealer. I did that for a bit, but then switch to zipper freezer bags. That way I can just pull out what I need and close it back up.

I do lacto ferments in vacuum bags. Far easier than jars and airlocks.
