    A lot of cheeses are made in a way that either decreases the amount of lactose or outright eliminates it. Also some things are worth it

    Nah I’ve heard of this before. Straight milk/cream/ice cream will trigger a reaction but cheese doesn’t. All depends on the individuals tolerance and what have you.

  3. It’s worded badly, but they probably mean they can’t do milk or cream (which are high in lactose), but things with trace/low levels of lactose (cheese, butter) are “ok”

    Most of the lactose is in the whey, which is removed during cheese production. Aged hard cheeses generally have very low lactose content.

    The older a cheese is, the less lactose it has. SO a fresh queso fresco could fuck them up, but an aged gouda or parmigiano is fine.

    As an industry vet with a casein allergy, aside from eating gravel metaphorically, I would never indicate this via text/email… Wtf. Have a human conversation please. Like dialog.

    i heard this too from a customer yesterday: “i have a problem with Gluten, i can’t have cheese.”

    but that was after so much other bullshit i did not have the energy to educate. i just nodded and suggested the salad.

    Y’all, no where does this say anything about allergies. There’s any number of reasons this person could be avoiding dairy and gluten. Sure the card is a bit much, a simple chat with the server wouod be more than enough, but y’all are acting like this person is Satan incarnate for daring to ask for food that doesn’t upset their stomach. And y’all are supposed to be chefs? Get it together.

    As someone who is lactose intolerant I can handle most cheeses, especially if it’s in small doses like one slice on a burger, the amount on a slice of pizza, or some in a salad. I cannot, and I repeat: cannot have a glass of milk. I also don’t do well with things like ice cream or cream sauces, unless it’s a very small amount, less than a cup or so. Sometimes it’s worth it to me to suffer but sometimes it’s not. It’s not an allergy so I get to choose if I want to really go for it and pay the price or skip out on that part.

    Most of my friends who are lactose intolerant are willing to suffer for cheese, but avoid everything else. Also, sometimes cheese causes less of a reaction depending on the individual. Another good thing to remember, lactose intolerance isn’t really the same as like a shellfish allergy. A shellfish allergy can kill you, whereas a lactose intolerance will make you shit your brains out.
