Welcome back to the kitchen! In this video, I’m cooking up a brand new recipe I created on the fly—a delicious, comforting eggplant pasta dish with sweet corn, melty cheese, bold spices, and lots of love.
I didn’t follow a strict recipe… I just trusted my taste and let the ingredients guide me—and it turned out so good! Creamy, cozy, and full of flavor.
Watch how I put it all together, step-by-step (with plenty of eyeballing and good vibes).
Try this recipe and let us know in the comments how yours turned out! I’d love to hear your take on it.

Yeah, I have already mixed that and I’m going to add my corn now. Okay, I’m still mixing the corn with everything. My bowl seem to be very small. Maybe I should use a bigger bowl or a bigger pan. But anyway, yeah, it’s coming along. Let’s add some cream. Mix, mix, mix. Do you think that’s going to be delicious, guys? Let let me know. And of course, to add some milk. And we mix mix mix. So it’s time to add the mixture to the bowl. Come closer. [Music] But I’m going to put in the oven now and let it bake for about 30 minutes. Yes. In the oven. Okay. Yes, guys. So, that’s it. It’s in the oven in half an hour. Take it out. Add the bell peppers. It’s out of the oven. I’m going to add some bell peppers to the top. And then I’m going to put it back in the oven for maybe about I would say 10 more minutes. 10 to 15 minutes. It’s going to be good. Voila. Now to go back in the oven. So, it’s out of the oven and it’s ready. Take a look. Yes. See that, guys? I think that’s going to be yummy. So, that’s it right here. So, I’m going to allow it to cool out for about 15 minutes before I cut it. And my husband is doing the cutting. That part I like him to cut because that’s Voila. Looks good. Looks good. Looks good.
