Hi guys, let’s make my favorite Middle Eastern dish, kusa mashi, which literally translates to stuffed zucchini. First thing, you’re just going to take your zucchinis and you’re just going to dig inside and take everything out till it looks like that. Keep this uh keep the guts because you’re going to need them later. Same thing with the eggplants and the green peppers. For the filling, you’re going to add rice meat, 2 tbspoons of salt, 1 tbsp of ground pepper, 1 tbsp of coarse black pepper, 1 tbsp of ground cumin, 1 tbsp of cumin seeds, 1 teaspoon of turmeric, 1 tbsp of seven spices, 2 tbsp of saffron, and one teaspoon of ground ginger, one cup of corn oil seed. You stir them well and then you add the zucchini um guts that we saved for later. Same thing with the um eggplants. And then you stir them well as well. And then you start stuffing them. You stuff your um zucchinis and then you stuff your eggplants. Same thing as your green peppers. Some people also do it with um tomatoes, but I didn’t for this time. You get a giant pot. I had to use two because my portion was pretty big. Um, so this is now we’re making the stew that we’re going to cook them in. All you need is um lemon juice, 4 tbsp of tomato paste, four tablespoons of pomegranate molasses, 1 tbsp of turmeric, 3 tablespoons of salt, 1 tbsp of ground black pepper, and 2 to three cups of water. Also, if you cannot find the seasonings, go to any local Middle Eastern shop and take screenshots of them and you’ll definitely find it there. So, now you’ll add the stew we made and then you add some more water until they’re all soaked in. You cover it with the lid and then after it boils, you add some garlic and dried mint. And then once they’re all done, you take them out of the stew. Keep the stew because you’re going to have it on the side. And this is me tasting them. They’re absolutely delicious.
