Dude, rice paper is a finicky thing. It’s like brittle, then you soak it for a second and it suddenly turns into something flexible. And you have 3 seconds to get the fillings in and roll it before it stops being pliable.

As long as they tasted fine, i cant see an issue. Rice noodles help bulk the springroll so it holds shape better and has that bouncy (i guess) texture
