    # Ingredients

    * 2 eggs
    * 1/3 cup unsweetened coconut milk
    * 1 tsp vanilla extract
    * 1 ¼ cup almond flour
    * 1 tsp baking powder
    * keto syrup and blueberries, for serving

    # Instructions

    1. To start, gather all of your ingredients one one place.
    2. Then in a bowl, beat eggs, milk, and vanilla.
    3. Add almond flour and baking powder.
    4. Stir the flour in until the batter is smooth.
    5. Heat a large non-stick skillet and pour ¼ cup of the keto batter into the skillet. 
    6. Cook the pancakes until bubbles appear on the surface. Lift and flip the pancakes and cook for 30 seconds. 
    7. Serve warm, drizzled with syrup and topped with blueberries or other berries of your choice.
