🥗 Mediterranean Orzo Salad
Ingredients:
- 1 ½ cups dry orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1 cup marinated artichoke hearts, quartered
- ¾ cup Kalamata olives, halved
- ½ cup roasted red peppers (optional)
- ½ cup feta cheese, crumbled
- ¼ cup sun-dried tomatoes (optional)
- 2 tbsp parsley, chopped
- 1 tbsp dill, chopped (optional)
Dressing:
- ¼ cup olive oil
- 3 tbsp red wine vinegar or lemon juice
- 1 clove garlic, minced
- 1 tsp dried oregano
- ½ tsp Dijon mustard
- Salt & pepper
Instructions:
- Cook orzo in salted water until al dente, drain, rinse, and toss with a little olive oil.
- Prep veggies & herbs while pasta cooks.
- Whisk dressing ingredients until smooth.
- Toss cooled orzo with veggies, herbs, and dressing.
- Fold in feta, chill 30 mins, and serve.
