Only asking because I haven't seen any recipes after a brief amount of googling.
I have several pounds of White Wonder tomatoes. They are very meaty, juicy but minimally liquid, and have little-to-no acidity that you find in standard tomatoes.
I hesitate to say it but would almost call it a sweet flavor, still very tomato.
Looking for salsa recipes featuring these guys. When I search "white salsa" I always get the creamy stuff. Not what I want.
I'll likely just try these with my usual recipe and see how to adjust, but if anyone knows a link or has made it themselves I'd love your input.

Might be a chance to mix in a few tomatillos or go heavy on lime juice if you want to replace the acidity. *or* lean into what you’ve got and maybe make something fruit-salsa-styled? Or if you have some very flavorful (not just magma hot) chilies, this would be a chance for them to shine.
Just spitballing, maybe a red bell or a pimento, some red onion (for color) or vidalia (if you want to ride that sweetness), and habaneros (with their fruity-floral taste) for heat? Lime/garlic/salt/pepper/cilantro to taste.
Or, if you’re in hatch chili country you could make salsa that features them for color and flavor instead of tomatoes.
What kind of chiles do you have access to? If you have it, I’d try a peach hab or something like that. I think a more delicate flavor might come through a bit more. Other than that I’d keep it simple to preserve the white color, maybe just garlic, the tomatoes, the chile, and some oregano maybe. Actually I think going heavy on the oregano could be nice here
