Blueberry Yogurt Pancakes

The secret? Swapping yogurt for extra fluff and folding in a quick homemade blueberry sauce for that burst of berry goodness 💙

Whether you’re gluten-free or just looking for a wholesome breakfast your family will devour, this one’s a keeper.

What you’ll need:
2 cups fresh blueberries
1 cup Pamela’s Pancake & Baking Mix (gluten free!)
2 @chinovalleyeggs Organic Omega-3 Soy Free Corn Free Eggs
⅔ cup blueberry Greek yogurt
⅓ cup water

Make the blueberry sauce: Add fresh blueberries and 2 tbsp water to a pan. Simmer over medium heat, then mash the berries as they cook to create a thick, saucy mixture.

In a bowl, whisk together the pancake mix, eggs, yogurt, and water. Stir in ½ cup of the blueberry sauce (save the rest for topping).

Heat a skillet over medium, lightly oil it, and cook the pancakes until bubbles form on top. Flip and cook until golden.

Serve with extra blueberry sauce or a drizzle of maple syrup! 🫐🥞
