Prawns (peeled, deveined) – 250g – 16 large prawns
Butter (unsalted) – 30g – 2 tbsp
Olive oil – 13g – 1 tbsp – 15ml
Garlic (minced) – 12g – 3–4 cloves
Peri-Peri sauce – 4 tbsp 60ml
Lemon juice – 1 tbsp 15ml
Salt – to taste
Black pepper – to taste
Parsley (chopped, optional) – 3g – 1 tbsp

Lemon Chilli Sauce
Ingredients
(For about 500ml or 2 cups)
• Fresh red chilies – 4 to 8 (adjust to taste)
• Garlic cloves – 6 (peeled)
• Lemon juice – 80 ml | 5 tbsp
• Lemon zest – from 2 lemons
• White vinegar – 60 ml | 4 tbsp
• Olive oil – 120 ml | 8 tbsp
• Onion – 1 small (about 100 g), chopped
• Salt – 1 tsp | 5 g
• Sugar – 1 tbsp | 12 g
• Smoked paprika – 1 tsp | 2.5 g (optional, for depth)
• Water – 60 ml | 4 tbsp
Thickener:
Xanthan gum – ¼ tsp (or omit for thinner sauce)

  1. I steam my shrimp in the shell following the Old Bay recipe then make a butter garlic lemon sauce, peel and eat!!
