Ingredients:

  • chicken breast
  • sweet potatoes
  • frozen sweet corn
  • low sodium canned black beans (drained and rinsed)
  • fire roasted diced tomatoes
  • green bell peppers
  • tomato paste
  • seasonings
  • reduced fat Mexican cheese

Dump everything but the cheese, chicken, and sweet potato into a pot, simmer until hot

Cook chicken according to your preferences.

Wash, peel, and slice sweet potatoes. I used a mandolin. Toss with olive oil and seasonings of choice. Cook in oven until soft.

Assemble: layer of sweet potatoes, layer of enchilada beans, layer of chicken, layer of sweet potatoes, top with cheese. Back into oven until cheese is melty.

    Ignore the macro targets lol. My fitness tracker hasn’t synced (it’s charging) so my targets are hella skewed for today.
