A rendition of a sicilian pastry classic!
"Brioscia siciliana" or "Brioscia cu' tuppu'". Homemade with sourdough. Reconstructed as a double bacon cheeseburger and holding a legendary pop culture reference by name. Not only for granita or gelato, locals say. So we gave it a try. Brioche bun was pan toasted before assembly.
Inside we have everything double.
- a beef quarterpounder, pan roasted in pancetta grease until crispy
- melted cheddar
- italian pancetta, super thinly cut, also briefly pan roasted
- a beautiful ripe mediteranean tomato
- ghurkins, sliced lengthwise
- slices of fresh red onion
- salt and cracked black pepper
I think the Sicilians are right. Tastes amazing. So many flavours and textures.
