Let’s make Pasta al Tonno – Pasta with Tuna and Tomatoes! This is another quick and easy pasta recipe and like many Italians, this was one of the first things I learned to make when I left home. In Italy we call it the student pasta because you can make it in no time with just a few cupboard ingredients and it’s a quick and easy meal for any day of the week. The polpa chopped tomatoes give the dish a rich texture with fresh flavour and you can also add capers and chilli for more of a kick. #MakeItMutti

Serves 2
200g your choice of pasta (I’ve used mezze penne)
400g chopped @muttipomodorouk polpa tomatoes
150g good quality tuna in olive oil
3 anchovies
½ red onion
10g parsley
Extra virgin olive oil

Pasta Altono tuna pasta. It’s one of my favorite pasta dishes. It’s quick and easy to make with just a few ingredients from the cupboard and it’s delicious. We’re going to start by finally slicing an onion and the parsley stalks. Pan on a medium high heat. A generous gag of olive oil. Go in with three anchovies. This is going to give a beautiful umami flavor. After 2 minutes, go in with the onions and the st. Give it a good good stir. The onion got really nice and soft, super sweet. And now you’re ready to go in with your chopped tomatoes. Season with just a touch of salt. Here I have some beautiful preserved tuna and olive oil. And I’m going to add it to the tomato sauce. With my hands, I’m going to flake into large chunks. I don’t want to break it too much. Give it a good stir. Turn it off. Cover it with the lid and cook your pasta. Pasta goes in. Meanwhile, I’m going to chop the parsley leaves. Once the pasta is cooked, put the sauce back on the heat and add your pasta. Add the small ladle of pasta water, the chopped parsley, and give it a good good stir. This one really takes no time at all to make. It’s quick and easy, and it really is delicious. If you have a busy schedule, this one is for you. You have no excuses. Enjoy.

My great grandmother who was born in San Gemini, taught to my mom this recipe (except it’s with garlic ) and it became my one and only favorite pasta recipe… the sauce is even better the day after. Like my mom, I was born in France but we always kept our love for Italian cooking. You know what I noticed.. I noticed that most Italians mix the noodles with the sauce. My mother always did that too .. to me. I consider that a real Italian, but most Americans put the sauce on top of the noodles. I don’t know why it taste different.

I grew up on this! In summer, my mother used chopped fresh tomatoes of course.
I tell people that this has tuna and anchovies only after they clean their plate. Otherwise I get the nose scrunch. But you really can’t tell from the taste. It’s just delicious.
This seems to have slightly different versions all across Italy, all good. One is actually called spaghetti alla Bolognese which is NOT ragù bolognese!
