Chicken Caesar pasta salad is a delicious end of summer (or all summer long!) meal perfect for lunch or dinner. Crunchy, crispy romaine, bow tie pasta, grilled chicken, croutons, Parmesan cheese and homemade Caesar dressing are a match made in heaven!
To make it:
Grilled or rotisserie chicken
Romaine lettuce
Bow tie pasta
Shaved Parmesan cheese
Croutons
Caesar dressing
For the grilled chicken:
Chicken breasts
Lemon juice
Olive oil
Garlic
Italian seasoning
Salt and pepper
Red pepper flakes
For the Caesar dressing:
Mayonnaise
Dijon
Lemon juice
Worcestershire sauce
Garlic

Let’s make a chicken Caesar pasta salad. It’s the perfect meal for the end of summer. We’re going to start by removing the leafier parts of a head of romaine lettuce. You could also just buy the romaine lettuce hearts, but my grocery store didn’t have any, so this is what I’m doing. After I’ve removed the leafier parts, I’m cing the lettuce and chopping it. And I will use the crunchier pieces of the lettuce in the salad. You want the crunchier, sturdier pieces rather than the leafy parts so it holds up to the dressing and the pasta salad, especially if you’re going to make this a little bit of ahead of time. Add that chopped lettuce right into a bowl of cooked and chilled bow ties or elbows. Then you’re going to go in with your chicken Caesar salad toppings, which are croutons, parmesan cheese, and grilled chicken. Now, you can use grilled chicken that you have previously made. I like using my Italian grilled chicken recipe, but you could also use shredded rotisserie. And then you’re going to hit it with some Caesar dressing. Again, you can use homemade, and I have a recipe on my site for that, or you can use your favorite storebought. Give it all a toss. Start with less than you think you need because you can’t take away the dressing once you’ve added it. And then you can always add more, which I just did because it still looked slightly dry now.
