I picked up this chicken a few weeks ago from Aldi and Kroger and froze it immediately. It comes to 12.3 lbs at $1.99/lb on sale. Chicken thighs so far have beeny favorite thing to can because I am THE WORST at remembering to pull things out to thaw before cooking. Canned food = ready to heat and eat.

    Good luck with your canning project. I agree on the convenience! Do you raw pack, bone-in?

    I raise my own chickens and I usually process 5 or so at a time. My Presto pressure canner/cooker can fit all 5 so I cook them all together, pull the meat off and then can it in the broth. My chickens are heritage breeds so their long leg bones just do not fit in jars very well and I am way too fussy to debone raw chicken!

    I’ve never done thighs, but I can a lot of chicken breast. So so easy on lazy days!

    Looks great! I need to do some. I have tons of boneless thighs in the freezer. Which method would you recommend for the least dry results?
