Marinated Rainbow Medley 🌈 The Easiest & Most Flavorful Appetizer Ever!

Fresh, colorful, and bursting with flavor — this marinated rainbow medley is the perfect appetizer to share with family and friends. Ready in minutes, but tastes like you’ve been in the kitchen all day!

Ingredients:
• 200 g (7 oz) canned artichoke hearts, drained and halved
• 200 g (7 oz) mozzarella balls
• 100 g (3.5 oz) black olives
• 100 g (3.5 oz) green olives
• 150 g (5.3 oz) cherry tomatoes
• 6–7 fresh basil leaves
• 1 tsp dry thyme ( or 3 sprigs fresh thyme)
• 1 tbsp apple cider vinegar
• Juice of 1 lemon
• 150 ml (5 fl oz) olive oil
• Salt, pepper to taste
• 1 tsp red pepper flakes
• 3 garlic cloves

Instructions:
1. Place all ingredients into a large jar or airtight container.
2. Seal tightly and shake well to combine and coat everything in the marinade.
3. Refrigerate for about 3 hours to let the flavors develop.
4. Serve cold as an appetizer, paired with warm, crispy baguette for a perfect treat.
