Ok recipe:
ICE CREAM
1 1/3 c milk
1/3 c loose leaf chai
2 cups cream divided into 1 and 1
4 egg yolks
3/4 c sugar
1/4 c white chocolate chips
Cinnamon and cardamom as you wish
First I just dumped like 1/3 cup of fancy loose leaf chai into about 1 1/3 cups milk and cooked it on low for a bit until it simmered and then let it steep until it seemed really chai flavored. Then I strained it and put it back in the pot with 1 cup cream, heated to steaming
Mix egg yolks and sugar until fluffy. Temper with hot milk/cream then add to pot on stove. Add white chocolate chips, cinnamon, cardamom. Cook until thickened.
Take off heat and stir in remaining 1 cup of cold cream.
Chill overnight and churn, add coffee swirl and cookie dough chunks
COFFEE SWIRL
ganache made of cream, white chocolate chips, instant coffee. measure with your heart.
SNICKERDOODLE DOUGH
I just googled small batch snickerdoodle dough and chose one!
TO EVERYONE WHO IS ABOUT TO TELL ME THEY HATE WHITE CHOCOLATE It adds just a smooth creamy sweetness that is so necessary to the texture and flavor. You can’t taste it. So many white chocolate haters tried it and none said they could have guessed there was any in there at all. DONT LEAVE IT OUT.
