


Reverse seared thick costco prime ribeyes, flash seared on the blackstone after pulling at 115 internal. S&P and MSG dry brine. Basted in butter that I infused with garlic and onion powder, celery salt, and thyme. Would've used fresh stuff if I had it. This got my toddler to eat more than one bite of steak for the first time.
I think im dialing the technique and I'm very pleased with this. What would yall do different? Anything visual you'd recommend? I'm not sure I like how greasy they look, but it obviously tastes good. TIA.

So, I’ve wondered about this exactly! I put some msg on a brisket the very first time I cooked and had a bark like no other, then spent the next like 7 chasing that bark.
I’ve now used the MSG on a couple and learned some more tricks, and the bark has been good!
Same for “crust” or Maillard reaction on sears. I wish I knew more about it to say for sure.

If ur curious why it works, we respond to savory taste in 3 ways – glutamates, nucleotides and salt. You want a balance of the 3 for things to taste savory. Red meat is high in nucleotides but low in glutamates, so a little msg balances it out. This is why mushroom sauce is great on steaks too.
I bought a bag of OG MSG, and I’m slowly working it into dry brines and rubs. I’ve only used tiny bits at a time, but it definitely makes a difference in enhancing flavor.
MSG is the best for most savory recipes! Really adds that umami flavor, don’t be afraid lol

They’re greasy because you are literally pouring over oil it (butter basting). I don’t think there is a way around it, but if you discover it, lmk. I think this is like a perfect medium rare. Very nice. I think that maybe the sear looks like it could be a tad burnt, but I didn’t taste it, so I don’t know, and there’s also individual preferences… for example, some people enjoy literally burnt toast, so it’s up to you.

Instead of msg, try Vietnamese fish sauce (I know it sounds strange but trust me). If you’re not using fish sauce in savory dishes, you’re missing out. It works as good or better than msg.
