For dinner tonight, we’re making crispy rice salad. Every week on my Instagram story, I post a poll asking you guys what I should make for the week. And for two weeks in a row, this came in second place. And a lot of people were sending me messages saying they still wanted me to make it. I kind of want to make it, too. I’ve never tried to make anything like this before. So, I’m excited to see how it goes. I have all my veggies prepped for the salad. And then I have a sesame ginger dressing that I made. I want to try some. You want to try some? I like some. I like the dinner. You like the dinner? More. More. Okay. [Music] Yummy. Get out of here. Never. Is it good? [Laughter] You eat one. Crispy Rice Salad!
Ingredients:
Cooked Rice – 2-3c
Soy Sauce – 3tbsp
Sesame Oil – 1tbsp
Sriracha – to taste
Chili Crisp – to taste
Salmon – 3 filets
Bachan’s Sweet Honey
Sesame Seeds
Cabbage – small head
Mini Cucumber – 4
Carrots – 2
Green Onion – 12
Bell Pepper – 1
Shelled Edamame – 1c
Sesame Ginger Dressing:
Avocado Oil – 1/2c
Soy Sauce – 1c
Rice Vinegar – 2tbsp
Honey – 1/4c
Kewpie Mayo – 2tbsp
Ginger – 2” piece (peeled)
Garlic Powder
Sesame Oil – 2tbsp
Lime Juice – 1
Directions:
1. Take the cooked rice and add to a baking sheet. Drizzle over the soy sauce, sesame oil and chili crisp. Give it a good mix until coated and flatten out. Bake at 400 until the rice is crispy. I also broiled it for the last minute or two. Allow to cool down.
2. I marinated the salmon filets in some Bachan’s Sweet Honey Sauce. Add to a baking sheet and throw in the oven with the rice for the last 25mins. I also broiled the salmon with the rice.
3. Thinly slice the head of cabbage then rinse and dry. Cut the cucumbers into quarters, slice the green onion and dice the bell pepper. I also just used a peeler to cut the carrots into ribbons.
4. For the dressing combine all the ingredients into a large bowl or quart container. Make sure to peel the fresh ginger, I also cut it into smaller chunks to make it easier to blend. Then I used an immersion blender, give a taste to see if you need to adjust.
5. Add the cabbage to a salad bowl along with some of the dressing. Add all your toppings including the broken up crispy rice. Pour over your dressing and toss to fully coat. I served it with some extra sesame seeds on top. Enjoy!

I live in AZ and during the summer I want something refreshing. I do Chinese chicken salad, a lot like your salad with iceberg lettuce and shredded cabbage. I drain & add a can of mandarin oranges. It’s got shredded carrot, cucumber, green onion, and a handful of peanuts. I use leftover chicken or Costco chicken. I toss with Paul Newman sesame ginger dressing. After dressing I throw a couple handful crispy chow mein noodles, it’s so good and the kids should love!
