Smoked fava bean tofu slab (by Big Mountain Foods — they make the best tofu I've come across) air-fried with a dry rub of cumin, garlic powder, smoked paprika, chili powder, smoked salt and cracked pepper and then marinated in hatch chile salsa, wrapped in rice paper and then pan fried. Served on a bun with arugula, Hatch chile aioli, heirloom tomato, thin slices red onion, and cilantro.

As someone who lives in ABQ I would give just about anything to eat this sandwich. Absolutely beautiful.
