A week ago I had a craving for…meatloaf. I made the Italian version, polpettone, which was excellent.
The next day I had a craving for a meatloaf sandwich. I’m kind of past the point in my youth where a meatloaf sandwich was meatloaf and ketchup on white bread, so I spent a couple of days playing with this, and this video is the final version.
The hard boiled egg may seem odd to some people, but it really works well, and is an ingredient in one of the very common Italian breakfast sandwiches, egg, artichoke and tuna on a croissant. It seemed like a weird combination, but they are very popular, so I thought I should try it, and they are good.
Back to the sandwich: good bread, caponata, polpettone, hard boiled egg, a good tomato, and pepper. You won’t be sorry. Enjoy.
