Cinnamon Raisin (laminated)Sourdough.

Much like cinnamon roll but so much better 😊

**Makes 1 loaf**
Ingredients:
– 100g starter
– 350g water
– 500g Unbleached AP flour
– 10 grams salt
– 1 cup raisins

Cinnamon Sugar Spread (Mix)
5g cinnamon
50g brown sugar (add more if you like it sweet)
4TBS Butter

Day 1
1. Combine Starter with 350 grams of warm water in a large bowl.
2. Add the flour and mix until no dry pockets remain. Rest for 25-40 minutes.
3. Mix in salt thoroughly until the dough comes together.
4. Let dough rise in a warm environment (75-80°F) for 30 minutes.
– Stretch and fold every 30 minutes for a total of 3 hours. Let sit for an additional hour after stretch and folds.

Laminate and pre-shape dough:
5. Transfer dough to a floured surface and spread out to a large rectangle (not too thin)
6. Spread cinnamon sugar mixture and a handful of raisins over the middle third of the dough. Fold a third of one end over, spread a layer of cinnamon sugar mixture and a handful of raisins and fold the other third over to the middle third.
7. Spread remaining mixture on it and sprinkle the rest of the raisins on it.
8. Line a proofing basket with floured towel or use banneton as is.
9. Shape dough ball as best as you can and transfer to proofing basket seam-side up, and let rise for 30 minutes to 1 hour at room temperature. Try stitching the dough to make it a bit more taut before transferring to the refrigerator.
10. Place into refrigerator (cold proof) for 10-12 hours or overnight.

Day 2
12. Heat a Dutch oven or lidded cast-iron pot in the oven at 450°F.
– create an expansion score line and transfer the loaf to the heated pot. Cover, and bake at 450°F for 20 minutes.
– Remove lid and bake for an additional 20 minutes @400F until golden brown.
13. **Cool:** Transfer baked loaf to a wire rack to cool for at least an hour.
